New American cuisine. Combined with attentive service
and one of a kind design, guests agree, this is "Utah's
Culinary Jewel." Metropolitan's menus attract after-work
socializing, sophisticated diners, celebratory parties,
and pre-theater goers.

Managing Partner.
Metropolitan opened in 1995.
Metropolitan’s Culinary Team
is lead by: Jed Banta, Chris Durfee, Justin
Shifflett and Chad Horton.
Each night the staff's focus is on
the guest's experience. Their genuiness and attention
to detail is apparent from the moment you pass thru
the glass doors. The environment is hip, warm, and approachable.
The curved granite bar and cozy lounge is a welcoming
spot for relaxing after-work, meeting new people, or
sharing small plates with an intimate friend. The bar’s
“Attitude Adjustment Hour” begins at 5:30pm
and includes 2 for 1 appetizers such as Roasted Pistachio
Soup, Crab Cakes, and Seared Foie Gras. $8 Bar Bites
are available all night. These small plate options may
include Salmon Rillette, Mac-n-Cheese, and Braised Short
Rib with mashed potatoes. A dynamic wine list provides
over 30 wines by the glass and a nearly 200 bottle selection.
Every Monday is Local’s Appreciation Night, offering
3 courses for $30 or 5 courses for $45 and complimentary
corkage.
In the dining room, cuisine is inspired by locally produced, seasonal ingredients, organic whenever possible. Metropolitan’s nightly 7 course tasting menu often includes our signature ingredient, foie gras. A “3 course for $30,”fixed price menu is available nightly and is popular among pre-theatre guests. The Metropolitan Culinary Team creates a playfully sophisticated menu to excite any palate. Sample menu items may include Muscovy Duck “sous vide,”Venison, Blue Nose Bass, Diver Scallops and Rack of Utah Lamb.
Metropolitan’s dining room would be extraordinary in any city. Once an abandoned warehouse on the west side of downtown Salt Lake, the award-winning design juxtaposes the raw and the refined, using touches of exposed concrete, polished copper and stainless steel, with granite, sycamore, fir, pear, mohair and silk to create a sleek modernist dream.
Metropolitan is the recipient of many distinguished awards, including DiRoNA, AAA Four-Diamond and Wine Spectator awards, and was named by the International Restaurant & Hospitality Rating Bureau as one of the “Top 100 Best Restaurants in the United States for the 20th Century.” Metropolitan has also garnered Zagat, Mobil and Fodor's rankings as well as features in Travel & Leisure, The New York Times, Washington Post, The Wall Street Journal, USA Today, The Los Angeles Times, The San Francisco Chronicle, Fortune, Bon Appétit, Wine Spectator, InStyle, National Geographic, Conde Nast Traveler, Food Arts, Cuisine, Interior Design, Sunset, Santé and Nation’s Restaurant News and Salt Lake Magazine.
